Guilt-Free Banana Nut Bread

Do you crave salt or sugar? Personally, I am a sugar person and crave sweets often, especially at night! I have been on a baking hype lately and one of my favorite go-to’s is banana nut bread. I decided to use my usual recipe, but changed some ingredients to create a healthier banana nut bread.


I searched three different stores and could not find almond flour. So, I used whole wheat flour instead. When I purchased the whole wheat flour, I found this plant-based sugar and decided to give it a try. I usually use Truvia (Stevia)- so you can use that instead. I exchanged regular salt with pink himalayan salt and used unsalted butter instead of salted.


I bake often, so prep time took me about 10 minutes and it bakes for about 45-50 minutes depending how moist you want it!


After I baked it, I had to taste it so I could give you guys a quick review. Be prepared for it to taste a little different as with anything that is made as a healthier alternative. But, with this I noticed there not to be too much of a difference. I was pleasantly surprised and happy of the outcome. If you wait 24 hours for it to cool, it tastes so much better :) You can always make multiple loaves and store in freezer. Be sure you let it defrost long enough, before you eat it. I always have to make more than one loaf since my household devours it!


Ingredients:


  • 1 ¼ Cups of Whole Wheat Flour or Almond Flour

  • 1 Teaspoon of Baking Soda

  • ½ Teaspoon Pink Himalayan Salt

  • 2 Eggs

  • 1 Teaspoon Vanilla Extract

  • ½ Cup of Unsalted Butter (Room Temp. or Melted)

  • 1 Cup of Whole Earth Allulose Baking Blend (Plant-Based Sugar Alternative)

  • 3 Bananas (more ripe, the better)

  • ½ Cup of Walnuts (I use a little more than a full cup)

  • Olive Oil Spray


Directions:


  1. Preheat the oven to 350 degrees and spray your baking pan with olive oil spray.

  2. Mix flour, baking soda, and salt in a mixing bowl.

  3. In a separate bowl (medium-sized), mix melted butter and plant based sugar together.

  4. In the same bowl with sugar, mix in eggs, vanilla extract, and mashed bananas. It should be a little clumpy.

  5. Transfer ingredients from that bowl to bowl which includes the flour, baking soda, and salt.

  6. Mix together and fold in walnuts.

  7. Bake in the oven for about 45-50 minutes. Stick a knife in the middle of the loaf and if there is a little mixture left on the knife- take it out. It cooks a little more once it comes out.

  8. Let it cool and WAH-LAH, enjoy! (I waited a full day to eat)
